There is no single American barbecue sauce

Ask five barbecue fans what a proper sauce should taste like and you may get five different answers. That is part of the fun. Across the country, sauce traditions developed alongside different meats, cooking methods, ingredients, and local tastes. At Red State BBQ, we like giving those traditions room to speak for themselves.

North Carolina: vinegar and pepper

North Carolina has a long history of tangy, vinegar-forward pork barbecue. Our North Carolina Spicy Vinegar is the bottle to reach for when you want acidity and pepper rather than a heavy sweet glaze. Toss a little into warm pulled pork, taste, and add more as needed. The point is to brighten the meat, not cover it up.

South Carolina: the mustard tradition

In parts of South Carolina, mustard-based sauce is a signature regional style. It brings tang, spice, and a little sweetness that works beautifully with pork. Try South Carolina Mustard on smoked ribs, chopped pork, or chicken. A light finishing coat is often all you need.

Memphis: a sweeter approach

Memphis barbecue is known for its ribs and a variety of sauce approaches, including sweeter tomato-based styles. Memphis Sweet is an easy entry point for someone who enjoys a familiar, crowd-friendly barbecue flavor. It is great with ribs, meatballs, and family cookouts where you need a sauce that appeals to a lot of different tastes.

Texas: let the meat lead

Texas barbecue traditions often put smoked beef and straightforward seasoning front and center. Our Texas Spicy brings a peppery kick when you want something bolder on brisket or chopped beef. Add it after smoking so you can still taste the bark and the work that went into the meat.

Kentucky and beyond

Kentucky Small Batch and Bluegrass Blackberry Smoke show how our home state inspires its own interpretations. One is versatile and approachable; the other brings blackberry sweetness and a smoky finish. There is no need to declare one regional style the winner. The better question is: what are you cooking tonight?
